Serial-entrepreneur, philanthropist, explorer, bon-vivant, collector of curiosities, occasional rapscallion, persistent socialite, classic eccentric and original builder and proprietor of the hotel from 1881 to 1934. Mr J.W. Chapman had a refined palate and expensive tastes with a penchant for fine food, fine wine, and fine company which drove him to import the best libations the world could offer.
